Plant Based Sancocho

Sancocho is one of my favorite dishes, fueled with vitamins and nutrients essential for our Immune system. It’s filing, tasty and an easy way to sneak in more vegetables into our nutrition.  Since it always makes enough for leftover, its a delicious meal that can prepared and frozen for up to 4 weeks,  It’s always a life saver for days I don’t want to cook and 100% Plant-Based.

Sancocho is a traditional dish from my motherland country Dominican Republic, and one of my favorite dishes grown up. My mom prepared it on rainy days, cold days and snow days, and I could eat sometimes up to 3 plates. My mom always makes 2 pots of Sancocho, one with poultry for my dad and me since I stopped eating red meat when I was 15, and another with beef for everyone else. 

After going plant-based in 2019, I made it my business to make the plant-based version, without meat and all it took was removing the meat to master it with the same great test.

The secret is all in the spices and seasoning. Enjoy this recipe from The Aybar Kitchen.


INGREDIENTS

3 Large Carrots 
4 Potatoes (Yukon or Idaho)
1 Green Pepper
1 Large Yellow Onion
4 Celery Stalks
3 Plantains 
1/2 Malanga
1/2 Buttercup Squash 
2 Tbsp Vegan Bouillon 
1/2 Cilantro bunch
3 Corn Cobs
3 Tbsp Minced Garlic 
1 Avocado

Spices for Seasoning: 

2 Tbsp Garlic Powder
2 Tbsp Onion Powder
1 Tbsp Oregano
1/2 Seasoned Salt
1/2 Celery Salt
1/4 Tsp Paprika
1/4 Tsp 
1/4 Tsp Black Pepper

Don’t forget the Secret Ingredient: Add Love! 

RECIPE

Step 1: Wash your vegetables (2 Carrots, Potatoes, Green Peppers, Yellow Onion, Celery Stalks, Plantains, Buttercup Squash, Cilantro, Corn and Garlic) in water, clean, peel and chop, adding them to a large pot with water.

Step 2: Cover, bringing water and vegetables to a boil until soft and tender. 

Step 3: In a blender, add 2 Carrots, Green Peppers, Yellow Onion, Celery Stalks, 1/2 Plantain, Buttercup Squash, Cilantro and pour it back into the large pot. This will give the soup a thick texture.


Step 4: Add your spice seasonings, add the Malanga & 3rd carrot, diced diagonally and continue stirring for 30 minutes.

Step 5: Serve + Enjoy either alone or with white rice and avocado slices. For my spicy lovers, Tabasco to spike up the heat and flavor!

Prince Wedding at Parkside Place

 
 

Last month, 3 days into my 30-Day Fast, I had a consultation with a new client and was challenged in my event coordinating expertise to a COVID Wedding. 😎

With City Hall being closed, the limited options are virtual or small ceremonies for couples. My client requested a small ceremony and asked me to take care of LITERALLY everything, and this how my team and I took the mission to @ChangeYourSetting at @ParksidePlaceNYC.

 
 

Originally, I had planned the wedding on the roof, but then thought of all the liability and went with plan b in case of inclement weather. Honestly, my close friends & family were really intrigued to see how I was going to pull this one off because I have a lot of crazy ideas but this was over the top. 😂

My goal was to make this an unforgettable and extraordinary wedding for them! 👰🏻💒🤵🏾

Literally, Everything (is) AYBAR! Just raise it higher and keep growing. It’s amazing to see what God challenges one to do during a Fast and having to maintain in the Spirit. I didn’t get to toast & celebrate with them, and the time pressure & dress stress were tempting, but Anything is Possible … even a Beautiful Wedding in The Bronx! It’s all about self-discipline.

I STILL can’t believe I pulled this off. 😩😎 I think this one might top off as one of my craziest ideas.

As an intern at Everything Aybar, the experience I’ve had has been valuable and beneficial.  The environment here at Parkplace is inviting, comfortable, and fun.  Here, I am always learning about new matters, new skills, and more about the world around me.  Ever since starting with the internship, I’ve learned new skills that increased my abilities on a computer, email communication, time management, and so much more. 

There are many resources available at your hands for anything you are interested in learning or doing.  Meeting new people, such as Aybar’s partners, is also a cool part of the experience because I can connect with them as well as develop communication skills.  Interning here at Aybar’s, it is very hands-on. 

We, as interns get to be very involved in the projects allowing us to add our inputs or suggestions which broadens our creativity and experience. 

Everything Aybar is a perfect place to start your journey leaving high school, going into college to advance your proficiency in career and lifestyle.
